Using a knife, break the shells of the eggs, and pour the yolks and whites into a deep bowl. Pour sugar here and, using a mixer, beat the ingredients at high speed until a homogeneous thick mass is formed. Attention: You need to stir until the sugar dissolves.

Step 3: Prepare the cupcake batter.


Pour the egg-sugar mixture into a medium bowl and add kefir and vegetable oil. Using a mixer, beat the ingredients at medium speed until smooth.

Now we begin to add the sifted flour in small portions. At the same time, we beat everything at the same time with available equipment so that lumps do not form. Somewhere in the middle of kneading the dough, pour baking powder and soda into the container and continue whisking everything vigorously until smooth.

We should get a thick, viscous mass, but liquid enough to work with it. That is, the dough turns out almost like pancakes.

Step 4: prepare cupcakes in a silicone mold.


Using a tablespoon, pour the dough into each silicone mold so that it fills the container exactly halfway. Then add a teaspoon of jam or jam. And so that we get the filling inside the baked goods, we cover it with a small amount of dough.

Now turn on the oven and preheat it to temperature 180–200 °C. Immediately after this, place the molds on the middle level and bake the cupcakes for 20 minutes. As soon as the dough on top becomes golden brown, remove the containers from the oven and check the baked goods for doneness. To do this, we pierce it somewhere in the middle with a toothpick and see if the wooden stick remains dry and without lumps of still raw dough, then the dessert is ready and you can turn off the oven. If not, then it’s worth extending the time further for 5–8 minutes.

At the end, turn everything off, take out the cupcakes and leave them aside to cool slightly.

Step 5: Serve the cupcakes in a silicone mold.


We take the still warm cupcakes out of the silicone mold (and this, by the way, is a very easy process, since the dough does not stick to the bottom and walls of the container) and place it on a special large plate.

We serve baked goods at the dessert table along with tea, coffee, juices and other drinks.

In general, the flight of fantasy is limitless!

The recipe for the simplest muffins is suitable both for cooking in portioned molds and for one small baking dish. All ingredients for making vanilla cupcakes should be at room temperature. So, let's take wheat flour (I use premium grade, but first grade will do), sugar, butter, medium-sized chicken eggs, baking powder and a pinch of vanillin for flavor.


Since the dough is made literally in 5-7 minutes, immediately turn on the oven to warm up at 180 degrees. Break fresh chicken eggs into a bowl, add 50 grams of sugar and a pinch of vanillin (if you want).


Beat everything with a mixer or whisk for a couple of minutes until the mass becomes homogeneous and fluffy. You can even beat everything with a fork - it doesn’t matter. Then add butter, which you either melt and cool beforehand, or just use very soft butter (take it out of the refrigerator a couple of hours before). Combine butter with egg mixture.



Mix everything to form a homogeneous, thin dough. The consistency will be like sour cream with 20% fat content. There is no need to stir the dough for a long time - just combine everything. If you try hard to make the dough smooth, the finished muffins will not be loose and fluffy, but will be dense and stuffed.


Place the dough into portioned molds approximately halfway full. I have silicone ones, but I still lightly greased them with vegetable oil. Place the cupcakes in a hot oven and bake for 20-25 minutes at 180 degrees.


    First, remove the margarine from the refrigerator and let it stand at room temperature. You can replace margarine with butter, then the muffins will have a more delicate taste. Rinse the raisins under running water, put them in a bowl and pour boiling water over them. Wait until the raisins swell.

    Place a piece of margarine in a bowl and add a glass of sugar to it. Grind the mixture thoroughly. Then, one by one, add raw chicken eggs to the butter and sugar and stir everything with a whisk.

    Sift premium flour through a sieve to saturate it with oxygen and get rid of lumps. Then add the flour to the bowl with the remaining ingredients. Quench the baking soda with vinegar and pour the mixture into a bowl. Instead of baking soda, you can use baking powder. Throw in a pinch of salt. Drain the raisins, squeeze them and add them to the bowl. Mix the ingredients thoroughly. Turn on the oven and preheat to one hundred and sixty degrees.

    Take muffin tins. It is best to use silicone ones. Metal ones must first be greased with vegetable oil so that the dough does not stick to them. Fill the molds two-thirds full with batter, as the cupcakes will rise and increase in size during baking.

    Place the molds with the dough in the oven and bake the muffins for forty minutes. Then remove the finished dish from the oven, cool, remove from the molds and sprinkle with powdered sugar. Serve with tea or coffee.
