Resourceful housewives, or as they say now “people who don’t have enough time,” come up with and simplify recipes that require a minimum of time and labor to prepare. One such lazy recipe is lazy stuffed peppers, which can be thought of as a stand-alone dish called a “rice side dish.” Of course, the taste is different from the original recipe, but this dish also comes out with excellent taste. Therefore, we will use simplified quick recipes to prepare delicious dishes quickly and easily.

Another good thing about the proposed recipe is that for preparing stuffed peppers we select peppers that are smooth and beautiful. And for a lazy recipe, any crooked peppers are suitable, because... they will still be cut. The type of fruit is also not important, but this dish is mainly prepared with sweet bell peppers, because... it is meatier and juicier. Choose mostly fluffy rice, but if this is not the case, wash it well under several waters to wash off the gluten. Take the meat according to your taste, if you like fattier dishes, buy pork, if you prefer dietary food, give the choice to chicken or turkey.

Ingredients:

  • Sweet bell pepper - 4 pcs.
  • Garlic - 2 cloves
  • Meat - 700 g
  • Rice - 150 g
  • Salt - 1 tsp. or to taste
  • Greens (any) - bunch
  • Vegetable oil - for frying
  • Tomatoes - 4 pcs.
  • Ground black pepper - a pinch
  • Onions - 1 pc.

Step-by-step preparation of lazy stuffed peppers, recipe with photo:

1. Wash and dry the sweet pepper with a paper towel, cut off the stalk and remove the internal seeds with partitions. Cut the fruits into cubes or strips and fry in a frying pan in vegetable oil until golden brown.

2. Peel the onions and grind through a meat grinder.

3. Wash the meat, dry it with a paper towel, cut off excess fat and film and pass it through the auger of a meat grinder.

4. Wash the tomatoes and dry with a paper towel. Cut into pieces, place in a food processor with a cutting blade attachment, and grind until smooth puree.

5. Rinse the rice under several waters and boil until almost done in lightly salted water.

6. Heat vegetable oil in a frying pan and add minced meat and onions. Fry it until golden brown, stirring occasionally.

7. Add fried peppers and boiled rice to the pan with meat.

Recently, a summer resident friend treated me to sweet peppers from her garden. She gave, as they say, from the heart. After a week, it became clear that my family would not be able to eat that amount of pepper simply by adding it to salads. The peppers began to wilt. But don’t throw away such a gift!
The peppers were all different colors and it was inconvenient to stuff them. And I thought, if there are “lazy cabbage rolls,” then why not “lazy peppers”? I wouldn’t be surprised if such a dish already exists in the culinary world. After all, ideas are in the air. But I invented this recipe just today. I decided that if the family appreciates it at dinner, I’ll post it on Review.
Wash the pepper.

We remove the insides, cut off the ugly parts from the skin.

If you find a rotten or moldy (even slightly) fruit, do not feel sorry for it - throw it away. Take pity on your health: rot and mold are extremely harmful.
We cut the pepper into rings 7-5 mm thick.

Salt and pepper the minced meat to taste. Mix.

Add rice to the minced meat. I don’t boil it in advance, I pour it dry.

Finely chop the onion.

We take a larger pan so that the food does not lie in it right up to the lid. Place in layers: half the sweet pepper, minced meat, onion, the other half of the pepper.

Pour boiling water so that the water does not completely cover the food.

And on the stove. Add a little water.
Add a little more ground pepper. Add tomato paste. Right during cooking, I found out that mine was finished, so I added ketchup.

Close the lid. When it boils, let's turn the heat down, but don't remove the lid. Now you can forget about the pan for 45 minutes.
After 45 minutes, add mayonnaise and simmer for another 15 minutes.
The dish is ready. Sprinkle with parsley.
And - on the table.

We eat with sour cream, ask for more!

First of all, I cut the onion into small cubes, grated the carrots on a coarse grater and sauteed them together in vegetable oil. It is better to do this immediately in a deep saucepan or cauldron. Since the entire dish will be prepared there.

I peeled the bell peppers, cut them into arbitrary cubes and stewed them with the onions and carrots.

I removed the skin from the tomatoes. To simplify this procedure, I sent them to swim in boiling water for a couple of minutes.

The skin then peels off on its own.

Stirred for the last time, closed the lid tightly, reduced the heat to low and simmered until done.

I didn’t really notice the time, but I think you’ll understand when the dish is ready. Eat it hot and always with sour cream. Delicious.

Many dishes have an alternative, simplified version. And not at all because today’s housewives are lazy to cook the classics. It’s just that the pace of life is so fast that there is catastrophically little time left for the kitchen. And you don’t want to part with the taste of your favorite dishes. There are lazy dumplings and cabbage rolls. But few people know about peppers with the same definition. Their taste is amazing and practically no different from ordinary ones prepared in the classical way. But you don’t need to bother with stuffing. Look how easy it is!

    Sort the rice, add water and place on the stove. As soon as it boils, reduce the heat to low and simmer for 10 minutes. Then drain in a colander and rinse with cold water.

    Free the sweet peppers from the tails, clean them from seeds and partitions. Chop coarsely so that the pieces fit into the neck of the meat grinder and pass through it.

    Mix minced pork, rice and chopped bell pepper. Salt and pepper to taste.

    Chop the peeled onion into small cubes and chop the carrots using a coarse grater. You can also cut it into thin strips.

    Fry the onions and carrots in heated sunflower oil for 5 minutes. Place into rice and minced meat.

    Add the egg, mix the resulting mass thoroughly and beat it a little. Cover the container with the minced meat with cling film and put it in the refrigerator for an hour to soak it.

    Take a baking dish with high sides and grease it with sunflower oil. Now, with wet hands, make large cutlets out of the minced meat and place them on a baking sheet close to each other, but so that they do not touch.

    Place sour cream in a small bowl and dilute it with a glass of boiled water. Add a little salt and pepper. You can throw in chopped dill. Pour the resulting mixture over the lazy stuffed peppers in a baking sheet and place them in an oven preheated to 200 degrees for 40 minutes. Do not immediately remove the finished dish, let it stand for another half hour in a warm place after the timer signal and serve.

Lazy stuffed peppers are a very tasty and quick to prepare dish for every day. It's incredibly easy to prepare and tastes exactly like stuffed peppers. By the way, on a plate, the prepared food looks incredibly appetizing. This pepper is ideal to serve with sour cream, but you can also serve it without it.

  • steamed rice - 1.5 cups
  • carrots - 3 pcs.
  • sweet bell pepper- 6 pcs
  • large tomatoes- 5-6 pcs
  • onions - 1-2 pcs
  • vegetable oil- 150 g
  • lemon juice - to taste
  • salt - to taste
  • sour cream - for serving
  • spices - cumin, ground black pepper- taste
  • greens - to taste

Cooking method

Peel and wash the carrots and onions. Wash tomatoes and peppers. At the same time, remove the seeds from the pepper.


Finely chop the onion and dice the carrots or grate them on a coarse grater.


Cut the pepper into strips.


Pour vegetable oil into a frying pan (preferably directly into the cauldron where the dish will be prepared) and lay out the prepared vegetables. Stir and simmer until the carrots are ready.


If the rice is not parboiled, I usually wash and heat the rice in oil or just in a dry frying pan.


Pour boiling water over the tomatoes and remove the skins (you can skip this step). Cut into rings. Finely chop the greens with a knife (I love the combination of pepper and celery, that’s why it’s my favorite in the photo).


Transfer the vegetables from the frying pan to a cauldron or pot (like mine). Add minced meat, herbs, salt and season with lemon juice and add spices to taste. Mix thoroughly and pour 3 cups of boiling water into the cauldron. Add steamed rice, lay out tomato rings and cover tightly with a lid.

Bring to a boil and simmer, without stirring, over low heat until tender (at least 40 minutes). Wrap it in something warm and let it brew. Then place on plates, season with sour cream and serve.
