General characteristics of the product

Spicy is an essential component of Japanese cuisine. The product combines the spiciness and saltiness of tobiko caviar. A special combination of flavors can be added to both fresh and juicy meat/fish steak. The scope of use of spice is limited only by your imagination and culinary skills.

Most often, the component is added to sushi or hot rolls. Spicy is introduced immediately before baking so that the roll gets a golden-brown, tender crust with a porous structure. The combination of piquant Japanese spice is especially popular.

Features of composition and recipe

Each ingredient can be changed at your discretion. Even basic mayonnaise or soy sauce comes in hundreds of variations on the market. Combine products, don't be afraid to experiment and find your signature taste.

How to prepare the product at home

The base of the sauce is spicy Japanese mayonnaise. It is made from soybean oil, egg yolks, rice/apple cider vinegar, light paste, ground white pepper and spices. All ingredients are thoroughly mixed until smooth, added to other dishes or served immediately.

If Japanese mayonnaise is not suitable, use other varieties of the product. For example:

  • olive - this type of sauce is called classic. For preparation, use raw egg yolks, mustard, vinegar or lemon juice. All components are combined, after which they are thoroughly kneaded for at least 15 minutes;
  • with wasabi is a mixture of ready-made sauce with powder. The powder is sold as a regular spice with a similar shelf life and scope/use. It is best to add wasabi in teaspoons so as not to overdo the spiciness of the finished dish;
  • soy is a meatless/vegetarian version of the popular sauce. The egg yolk is replaced. It also contains half a tablespoon of mustard, a tablespoon of sugar, two tablespoons of lemon juice and spices to taste. Whisk the mixture intensively, then gradually pour in 4-5 tablespoons of vegetable oil (used extremely rarely). It is important to beat the mayonnaise continuously and at the same speed so that the product does not separate;
  • with lemon - to prepare it, just add a few tablespoons of lemon juice to the ready-made mayonnaise. Additionally, you can replace the vinegar with lemon juice to get the most rich and concentrated citrus flavor.

Recipe No. 1: “homemade”

We will need:

  • olive mayonnaise – 2 tablespoons;
  • red chili pepper – 5 grams;
  • – 3 cloves;
  • spices to taste.

Preparation

Grind the garlic (if possible, pass it through a press) and red chili pepper. Mix all ingredients until you achieve a homogeneous consistency. You can add seeds or, for example, chopped nuts to the finished sauce to diversify the taste.

This version contains minimal calories due to olive mayonnaise. The product also adds a special taste and texture to the finished dish. If you wish, you can use any type of mayonnaise that suits your taste or just happens to be in the refrigerator. Keep in mind that additives change not only the gastronomic characteristics, but also the chemical composition of the finished dish.

Recipe No. 2: “classic”

We will need:

  • Japanese mayonnaise - 2 tablespoons;
  • soy sauce – 1 tablespoon;
  • chili pepper to taste;
  • tobiko caviar – 1 teaspoon (can be replaced with any fish caviar to taste).

Preparation

The cooking method is practically no different from recipe No. 1. The caviar must be introduced at the last stage of cooking, after which the contents of the sauce boat must be mixed again. From this set of products you can make a citrus spicy sauce. It is enough to add 1 tablespoon of lemon juice.

The classic version uses caviar and Japanese mayonnaise to create a hotter, higher-calorie spice.

The taste of the finished dish is moderately spicy, slightly burning, salty with noticeable sour notes of tobiko caviar.

Can sauce be classified as a healthy product?

Spicy contains 2 contradictory products - mayonnaise and soy sauce.

Soy sauce is high in salt. But if your diet is well-balanced, then one spoon of salty liquid will not cause much harm in the form of swelling or sodium imbalance.

With mayonnaise, things are more complicated. Consider a classic product that can be prepared in your home kitchen. The recipe contains: vegetable oil, egg yolks, mustard and spices. It seems that the composition is absolutely safe and definitely cannot harm the human body.

In accordance with GOST, classic mayonnaise without additives, preservatives or dyes contains from 55 to 67% fat. The average calorie content, however, is about 600 kcal/100 grams of product. Any dish that you want to add mayonnaise adds an extra hundred or more unnecessary calories. Eating excessively fatty foods is fraught with atherosclerosis, coronary heart disease, obesity and disordered eating habits. The standard composition is supplemented with trans fats, gluten, salt, sugar, flavor enhancers and other achievements of the gastronomic industry. The consumer pays not only for the food product, but also for the low nutritional value and potential health risks.

What are the risks of overusing industrial sauce:

  • exacerbation or development of acne;

  • lime – 0.5 pcs.;
  • lemon – 0.5 pcs.;

  • garlic – 4 cloves;
  • sesame oil – 0.02 ml;
  • soy sauce – 0.015 ml;
  • cane sugar – 0.015 kg;

Preparation:

Rinse citrus fruits and peppers. Remove the skins from the onion and garlic. Add soy sauce to sesame oil and stir well. Wipe the pepper with a paper towel and apply the sesame-soy mixture on it.

When the pepper is ready, it should be cooled and then removed from the seeds and skin. Coarsely chop the resulting pulp.

Place peppers, onions and garlic in the bowl of an immersion blender. Grind to a paste consistency.

Making spicy sauce at home is not easy, because it will require a certain set of products, which, as mentioned above, cannot be purchased in any store.

Ingredients:

  • 6-8 pieces of hot chili peppers
  • 55 g white onion
  • olive oil
  • 20 pieces garlic cloves
  • 240 ml water
  • 800 ml vinegar
  • 20 ml lime juice
  • 25 ml prepared Worcestershire sauce
  • 4 g ground cumin

Cooking method:

  1. Place 6-8 pieces of hot chili peppers on a baking sheet, pour in olive oil, salt and bake for 10-20 minutes in the oven at +210 degrees.
  2. This will make the peppers soft and the skin will come off.
  3. Then you need to clear them of seeds and chop them.
  4. Finely chop 55 g of white onion and sauté in a saucepan with olive oil.
  5. Grind 20 garlic cloves into a puree and add them together with the chili pulp to the sautéed onions.
  6. Mix 240 ml of water with 800 ml of vinegar and pour this solution into a saucepan.
  7. Then pour in 120 ml of lime juice and 25 ml of ready-made Worcestershire sauce, salt and season with 4 g of ground cumin.
