Place a cinnamon stick in a cup and pour boiling water over it for 20 minutes. Wash the tomatoes and use a toothpick to make a puncture in the place of the stalk, this is necessary so that the fruit does not crack (choose dense tomatoes, preferably the “cream” variety).

Place currant and raspberry leaves, bay leaves and allspice at the bottom of a clean, sterilized jar. Fill the jar with tomatoes.
Boil water in a kettle. Pour the water in which the cinnamon stick was soaked into a ladle (after removing the cinnamon stick) and bring to a boil, since the water in the cup has cooled down in 20 minutes. First pour boiled water, which has been infused with a cinnamon stick, into a jar of tomatoes, and fill the rest of the jar with boiling water from a kettle. Leave the jar of tomatoes for 20 minutes, covering with a boiled lid.

After a while, pour the water from the jar into the pan, put the cinnamon stick in it again, add sugar, salt and vinegar. Bring the marinade to a boil and cook for 3 minutes.
Remove the cinnamon stick; we won't need it anymore. Pour boiling marinade over the tomatoes in a jar and immediately roll up with a key.

Turn the jar upside down, then wrap it until it cools completely.

Tomatoes with cinnamon are ready for the winter; you can safely store jars of such tomatoes in your home pantry.

Wash the seaming jars with soda, rinse them several times, then sterilize them, let them cool and dry. Place parsley sprigs, a cinnamon stick and laurel leaves on the bottom. Such spices will make tomatoes tasty and original.

We take tomatoes for canning in liter jars that are not very large, so that they fit better in the container. Place the washed tomatoes in jars and pour boiling water over them. Leave for 10 minutes, covering with a lid.


Let's prepare the marinade: boil water and add sugar and salt. Stir the marinade until the grains at the bottom dissolve. We wait for the liquid to boil again and cook for 1-2 minutes. At the very end, pour vinegar and mix. Remove immediately from heat and the marinade is ready.


Drain the water from the tomato and immediately pour in the hot marinade and vinegar. We seal the jars and place them under a warm blanket. If you used iron lids, then turn the jars over and insulate them. There is no need to turn over jars with screw lids, just throw a blanket on top and let them cool completely. After 6-8 hours, remove the blanket and put the tomatoes in the pantry until winter. Enjoy your meal!

This is a simple recipe for unusual, but very tasty tomatoes. The trick is that during the cooking process we will add ground cinnamon. This gives the appetizer some spice and originality.

  • ground cinnamon - 1 pinch,
  • parsley - to taste,
  • hot pepper - to taste

How to make tomatoes with cinnamon

It is better to take tomatoes that are dense and small in size. We wash the fruits, make several punctures on each one using a regular toothpick, so that they do not burst from exposure to boiling water, but retain their shape.


Place herbs, a pinch of cinnamon and a small piece of hot pepper at the bottom of the jar.


Place the tomatoes in a clean and dry jar. We do this as tightly as possible, but very carefully so as not to damage them.



After that, pour it into a container and prepare a sweet brine: add kitchen salt, granulated sugar and mix. Pour a portion of table vinegar directly into the jar.


And then fill it with hot brine. Roll up the steamed lid. Place in an inverted position until the workpiece has cooled.


To improve the tightness, you can put the jar “under a fur coat”. After a day, we store the finished preserves in a dark, cool place.
