Casserole with liver and pasta. Pasta casserole with liver

Hello! I want to tell you about a good recipe for a simple but very tasty casserole. It is prepared from the liver, and any. In this recipe, I cooked from chicken liver. As a basis, I use medium-sized boiled pasta. Well. of course, fried onions and carrots, because they are just made for each other with liver!
This casserole turns out to be juicy, satisfying and delicate in taste. Easy to cut and hold its shape. It is easy and quick to prepare. What else do you need for a delicious lunch or dinner?

Onions must be peeled and cut into cubes or half rings.

Peel and grate the carrots.

Fry onions with carrots in a pan in vegetable oil. Salt to taste.

Cook pasta by boiling it in salted water. I do it a little differently: when the water boils, I add the pasta, bring it to a boil again, stir it and turn off the heat. Cover the pan tightly with a lid and leave it there for 5-7 minutes. During this time, the pasta is steamed and swollen. At the same time, they do not boil over. Then I pour them into a colander and rinse them under running water. The pasta is ready.

The liver must be rinsed, dried and all films removed.

Pass through a meat grinder or grind in a blender. Add some ground pepper and salt to it.

Beat eggs to the liver, beat with a whisk.

Pour pasta and fried onions with carrots to the liver and eggs. Mix everything.

Grate hard cheese.
Pour the resulting mass for the casserole into a mold, greased with butter and sprinkled with flour. I covered it with foil, so it's also convenient.

Put in an oven preheated to 180 degrees. Bake for 30 minutes.

After the time has elapsed, take out the baking sheet with the casserole and cover the top with grated hard cheese.

Pasta casserole is quick and tasty. You just need to add any filling (minced meat, tomatoes, cheese, liver, etc.) to the pasta, and here is a culinary masterpiece. In addition, it happens that the main course is eaten quickly, but the side dish remains. And the question often arises of how to prepare such an original, so that both the side dish and the main dish are eaten, and nothing remains. So I want to tell you what you can do with the remaining pasta (if suddenly they are left). Prepare a pasta casserole with chicken liver, although to be honest, for such a delicious dish, you can boil them on purpose. For the filling I used chicken liver. This offal is very healthy, the liver is tender and cooks very quickly. I highly recommend trying the pasta and liver casserole as it's a great option for a quick dinner. Note to moms: I have two little sons, one of them, well, does not want to eat the liver in any way, for me this is unacceptable, because it is useful for a growing child's body and should be present in the diet. But he loves pasta, and the liver does not even notice with them, he crushes both cheeks. But not just with liver gravy, but a casserole where the liver is hidden between layers of pasta. Well, everything is clear, let's get down to business.

For cooking, we need the following ingredients (the amount of products depends on the amount of homemade ones):

  • Feather pasta 1 kg.
  • Fresh chicken liver 800 g.
  • Chicken egg 3 pcs.
  • Onions 3 pcs.
  • Carrot 1 pc.
  • Hard cheese 200 g.
  • Some bread crumbs.
  • Several tablespoons of vegetable oil.
  • Salt and pepper to taste.

Cooking process:

  1. First, let's cook the liver. Peel and cut the onion into half rings, rub the carrots on a coarse grater. Simmer them in a hot frying pan with vegetable oil for 5 minutes.
  2. Then add the chicken liver, washed, whole as is, to the vegetables, salt, pepper and simmer for 15 minutes.
  3. Immediately grate the cheese on a coarse grater and leave it aside for now.
  4. The liver and cheese were cooked, it remains to boil the pasta, if they are not ready. We throw the products into boiling salted water, cook, then rinse them, strain from the liquid in a colander. Next, add eggs to the finished feathers.
  5. Then put parchment paper on a baking sheet (this is optional), grease a little with vegetable oil and sprinkle with breadcrumbs and spread pasta mixed with eggs (part). This will be the first layer.
  6. Then we lay out the liver on them, I like it when it is in whole pieces.
  7. Let's tame her a little with cheese.
  8. Next, we lay down the rest of the pasta and sprinkle with breadcrumbs so that they stick well in a pile.
  9. Then sprinkle with the remaining cheese and send it to a preheated 180 degrees oven on the second shelf for 30 minutes.
  10. Then we take out the baking sheet from the oven and our pasta casserole with chicken liver is ready.
  11. It keeps well in a pile, when we cut it, it does not disintegrate.
  12. Serve hot, delicious with ketchup or just with herbs.
  13. Enjoy your meal!!! Author: Lenka.

The leading places among liver diseases are occupied by infectious, alcoholic hepatitis, as well as cirrhosis and cancer. Untreated hepatitis is complicated by fibrosis, the development of which is caused by hypoxia (oxygen starvation) of hepatocytes and their replacement by connective tissue. With the continued action of a negative factor, the pathological process ends with cirrhosis or tissue malignancy.

It is quite difficult to symptomatically suspect hepatic pathology, because often the initial stage of the disease does not have clinical manifestations. If the liver hurts, it is worth suspecting hepatomegaly (an increase in liver volume) - this indicates a stretching of the fibrous capsule of the organ.

Sometimes hepatic dysfunction is detected by chance during a preventive examination using a biochemical blood test. In addition, changes in the performance of the gland can be detected during the diagnosis of another disease. In any case, a thorough examination of the patient and determination of further treatment tactics are required. It can include:

  • surgical intervention (with cystic lesions or the presence of metastases in the gland tissue);
  • hepatoprotectors (Karsil, Essentiale, Heptral);
  • antiviral (Viferon);
  • detoxification solutions (Neohemodes, Reosorbilact);
  • antispasmodics (Duspatalin);
  • choleretic (Ursochol);
  • vitamins.

In addition to medication support, a daily menu and strict control over the diet are required. The patient must be sure to follow a diet and eat only permitted foods. Oddly enough, it is proper nutrition that makes it easier for the liver and normalizes the digestion process. The first results can be seen already on the 20th day of diet therapy.

Continuing to abuse alcohol and eat fatty foods, you can not even hope for a good effect of treatment. With the help of drugs, it is possible to only temporarily reduce the severity of clinical symptoms.

A well-designed diet and menu prevent exacerbation of chronic cholecystitis and inhibit the progression of hepatitis.

The diet for liver disease is usually prescribed:

  1. to recover from hepatitis;
  2. with cirrhosis and hepatosis;
  3. in the postoperative period, when surgical intervention was carried out on the organs of the hepatobiliary system (liver, biliary tract);
  4. for the prevention of stone formation.

General principles

The dietary menu is compiled on the basis of the permitted products that are included in diet number 5. General guidelines include:

The daily drinking volume should be one and a half liters. Nutrition for pain in the liver should be especially strict. This will reduce the load on the digestive tract and reduce soreness. The dietary menu should accompany drug therapy. Only through a combined approach is there a chance for a positive result.

Prohibited foods for liver disease

The first step in drawing up a diet, you need to consider that you can not eat when the liver hurts:

  • fatty types of milk and meat are strictly prohibited;
  • semi-finished products;
  • fast food;
  • freshly baked bread;
  • sour and hot seasonings;
  • marinade;
  • any dishes prepared by frying;
  • fat;
  • pickles;
  • caviar;
  • canned food;
  • smoked meats;
  • mushrooms;
  • fried eggs. One steep boiled egg is allowed per day;
  • okroshka;
  • "Cool" broths;
  • mayonnaise;
  • borsch with sorrel;
  • radish;
  • horseradish;
  • pancakes, fried pies;
  • alcohol, coffee, and soda.

What can you eat for liver disease

The dietary menu includes the following healthy foods:

  • yesterday's bread;
  • low-fat milk, skinless meat;
  • boiled or baked fish;
  • protein omelet;
  • vegetable soup (you will have to forget about frying);
  • milk soup;
  • vegetable salad;
  • oatmeal, buckwheat, and rice;
  • vegetable oil;
  • the volume of butter should not exceed 5 g;
  • dried fruits;
  • non-acidic fruits (prohibited include persimmon, as well as grapes);
  • marmalade.

Dish recipes

Despite the many prohibitions in a nutritious diet, you can still cook tasty and healthy. Recipes for meals should include only approved foods, which is necessary to prevent deterioration in general condition. Of course, with liver pain of high intensity, even those foods that are usually allowed in a small amount should be excluded.

Snacks

If your doctor does not prohibit eating vegetables, whether fresh or baked, you can prepare light meals. They are suitable both for an afternoon snack and as an addition to the main meal (lunch or dinner):

First meal

The use of first courses by sick people is mandatory, however, you must adhere to some cooking rules. Preference should be given to grated types of soup. Here are some recipes:

  • to cook borscht you will need carrots, cabbage, chicken breast, potatoes, some onions and tomatoes. Raw meat should be cut into small pieces, salt and put in the oven for a quarter of an hour. The cabbage is chopped, the potatoes are chopped, and the carrots and onions are chopped in a blender. All ingredients, including meat, must be placed in boiling water and cooked until the chicken is tender. Add tomato and salt to the dish, then boil for another 5 minutes;
  • chicken puree soup. The recipe includes chicken breast, potatoes, carrots and onions. The cooking technology practically does not differ from the one written above. At the end of the culinary process, the soup must be cooled and whipped in a blender. For warm soup, you can serve croutons and low-fat sour cream;
  • rice soup. For cooking, it is enough to cut the potatoes, add water, add rice and cook for a quarter of an hour. Then add carrots, broccoli and onions and continue cooking. Salt to taste, but in compliance with the recommended daily volume.

Second courses

It is important to remember that a complete meal should include a soup and a main course. With buckwheat, mashed potatoes or rice, you can serve cutlets, chicken leg or cabbage rolls. Now more about the cooking method:

  • due to the fact that the diet focuses on protein products, you should not limit yourself to meat products. To make cutlets, you need minced chicken (480 g), egg white and flour. Minced meat should be done independently, as there may be various additives (fat, kidneys) in the ready-made store form, which is not recommended for liver diseases. We mix all the ingredients, add salt, form cutlets and dip them in flour. Cooking method - steamed (in a double boiler or multicooker);
  • the recipe for cabbage rolls includes cabbage, chicken, rice, sour cream, as well as carrots and tomato juice (as agreed with the doctor). Boil the cabbage, separate the leaves and cut off the hard stem. Next, cook the rice, cook the minced meat, simmer it for 10 minutes, combine the ingredients and salt. A small amount of filling must be wrapped in a cabbage leaf and left in the oven for 15 minutes at a temperature of 200 degrees. To prepare the gravy, you need to mix sour cream, tomato juice and grated carrots. Fill the cabbage rolls with gravy and simmer until tender (5-10 minutes);
  • chicken leg with vegetables. First, simmer the broccoli and potatoes for 5 minutes, then add a little salt. Make a deep cut in the chicken leg and fill it with the vegetable filling. Salt and send to the multicooker;
  • cutlets with carrots. To make breading, you need yesterday's bread. It must be dried in the oven for 3-5 minutes and crushed into powder. The minced chicken should be mixed with an egg, chopped onion and grated carrots, and then salt. We form flat cutlets from minced meat, sprinkle with crackers and cook in a slow cooker.

Delicious afternoon tea

You can improve your mood and diversify your diet with cheese cakes, baked fruits or dumplings:

If dietary nutrition is followed, the work of not only the hepatobiliary system, but the entire digestive tract is facilitated. The body receives a sufficient amount of nutrients, vitamins and microelements, which allows for the functioning of each organ and system of the body.

Nutrition and menus for hepatitis C

Infectious liver diseases, hepatitis are a group of diseases that differ in their severity and possible consequences. Hepatitis C is most dangerous because, as a rule, it is a chronic disease with damage to the liver tissue. Its treatment is to slow down the destruction of cells, prevent the disease from going into the following dangerous stages: cirrhosis and liver cancer.

Nutrition for hepatitis C plays an important role, just like diet for hepatitis B. The affected liver cannot fully cope with its functions of processing fats, removing toxins, and regulating blood composition. It is required to unload it as much as possible with a diet, without upsetting the balance of essential nutrients in the body.

Diet rules for hepatitis

If with hepatitis B a strict diet can be temporary, since this disease is mostly acute and treatable, then the diet for hepatitis C should be followed for life.

The diet is of great importance. Food should be taken in small portions, regularly, 5-6 times a day. Such a regimen is useful for a healthy person, but for a hepatitis patient it is necessary.

The diet for chronic hepatitis should be based on the following factors:

  • Satisfaction of the necessary needs of the body in the amount of nutrients;
  • Reducing the calorie content of food;
  • Improving the quality of food intake, eliminating harmful additives;
  • Using certain methods of processing products;
  • Compliance with taste preferences. Meals can contain all the nutrients you need and still include the sick person's favorite foods.

In viral (and even more so alcoholic) hepatitis, alcoholic beverages, juices containing additives of preservatives, dyes, flavor enhancers, lemonades and other sugary drinks should be completely excluded from the diet. In the developed diet for hepatitis B and C, natural, preferably freshly squeezed juices, compotes, and low-fat milk are recommended for drinking. You cannot drink strong tea and coffee. Green tea and herbal infusions, on the other hand, will be of great benefit.

What foods should not be eaten

You should completely abandon products such as:

  • Margarine, mayonnaise;
  • Vegetable pickles and marinades;
  • Broths of meat and fish;
  • Smoked products;
  • Any canned food;
  • Spices and hot seasonings;
  • Sweets and pastry products.
  • Milk, low-fat cottage cheese. The substances contained in them are necessary for normal digestion, the functioning of the skeletal system, and the regulation of metabolism;
  • Fat-free meat and fish;
  • Natural butter, vegetable fats;
  • Oats, barley and buckwheat dishes;
  • Vegetable soups and salads;
  • Vegetable purees;
  • Fresh and dried fruits and berries;
  • Nuts and seeds;
  • You can eat eggs with hepatitis C (no more than 5 pieces a week), but they should be soft-boiled, not hard-boiled. You can make an omelet in milk from them. They cannot be eaten fried.

Calorie and nutrient content of dietary meals

Reducing the load on the liver involves the use of low-calorie foods with restrictions on the composition of certain components. Moreover, the diet for hepatitis B, C or another form of the disease does not set itself the task of compulsory weight loss. Compliance with the intake of nutrients is necessary to maintain normal metabolism and immunity, since without them, liver treatment is impossible.

The dietary table for hepatitis (diet number 5) daily should contain nutrients in the following amounts:

  • Vitamins (A- 50g; B1 and B2 - from 2 mg to 4 m; B5 - nicotinic acid - 20 mg; C- 200 mg);
  • Table salt not more than 10 mg;
  • Carotene (provitamin A) - 10 mg;
  • Fats. (Of which 30% vegetable oil, 70% butter) - 100 g;
  • Proteins (meat, eggs, fish and other products) - 100 g;
  • Easily digestible carbohydrates (pasta, stale bread) - 450 g;
  • Sugar - no more than 50 g.

Food for hepatitis C should also contain a certain amount of elements necessary for the work of the heart and other organs, maintaining the composition of the blood (iron, calcium, magnesium, phosphorus and others).

Hepatitis C dietary recipes should take into account that the number of calories in food eaten per day should not exceed 3100 units.

During an exacerbation of the disease, the diet for chronic hepatitis becomes tougher: the rate of consumption of fats and salt decreases.

Nutrition for chronic hepatitis should be complete and varied, food and drinks should be consumed only warm. Cold or hot food impairs the absorption of nutrients.

Hepatitis C weekly menu

This menu is used for chronic diseases. It is compiled taking into account the fact that the diet for hepatitis C should provide unloading of the liver by reducing the calorie content of foods.

Diet with hepatitis C and adherence to the diet allows you to improve bowel function, stop the destruction of liver cells, normalize the gallbladder, and regulate metabolism. As a result, pain in the liver area will stop. Like the Hepatitis B diet, restricting the use of foods that are harmful to the liver increases the body's ability to fight off other infections.

I really love to cook all kinds of casseroles. In addition to being much healthier than any dish cooked in a pan, they are also very beautiful.

Agree, all casseroles always get very elegant golden brown crusts, regardless of whether they are sweet, vegetable or meat. To do this, just grease their surface with an egg, sour cream or mayonnaise. And if sprinkled with grated cheese on top, it will be even tastier.

Unfortunately, I just can't teach my children to it, so one day I went for a little trick. I made just such a pasta casserole with liver, they asked what it smells so good. I confess I deceived, I said that the casserole with meat.

The children got it down on both cheeks, they didn't smell the catch. Then I tried it myself, as if from their position. Of course, it doesn't look like meat at all, but all the same, cheese with garlic and mayonnaise confused them a lot, they didn't recognize the liver, and I'm just glad. Now I will slowly teach them to the liver, after all, it is simply necessary for good nutrition.

Cooking such a pasta casserole is incredibly simple, each of you can easily cope with it.

To prepare a pasta casserole according to this recipe, we need:

  • 300 grams of beef liver
  • 200 ml milk
  • 300 g pasta
  • 2-3 onions
  • 200 grams of cheese
  • 2 eggs
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 2 cloves of garlic
  • salt, black pepper to taste
  • vegetable oil for dish lubrication

First, let's deal with the liver itself. Today I stopped at beef. She, of course, is not as dietary as chicken, but it is much richer in taste. First of all, I will rinse it properly under running water:

Then I'll take off the film:

Now you need to cut it into equal portioned pieces:

Put the prepared pieces of liver into a bowl and pour milk in such a way that it covers them almost completely. Now let them take a milk bath for about forty minutes.

The liver, of course, must be able to choose. If you come across an old one, no milk will help. But if someone attacked such a person at least once, then he will not be mistaken in the choice. Today my piece is clean, fresh, it is a pleasure to work with it.

While the liver is soaking, cut the onions into large half rings:

Then fry it in a separate pan until golden brown:

In parallel with this, we will boil pasta in salted water.

In general, I try to undercook them a little, since they then languish for another twenty minutes in the oven. Although I only buy the best pasta made from durum wheat, they are very difficult to digest, so they never let me down.

Now I'm going to fill our casserole. The whole process will take no more than five minutes.

Just grate the cheese on a coarse grater, mix it with mayonnaise and sour cream, add two raw eggs, mix everything. For taste and pungency, I will squeeze a couple of cloves of garlic into the resulting mixture, mix everything again, and now our future golden brown crust is ready for the casserole:

After soaking, I put the pieces of liver into a colander so that the excess milk is glass:

Then I'll cut them into thinner pieces:

Transfer to a plate with flour, mix:

You can fry. I do this in a well-heated frying pan with vegetable oil. As soon as one side is browned, salt, pepper, turn over, fry on the other side. Approximately five to seven minutes on each side:

Basically, the liver is ready to eat. With this principle of frying, it always turns out to be very tender and juicy. But, if you overexpose it even a little in a pan, it will become much tougher, then it will take much longer to stew it and the structure of the liver will become completely different, and this is definitely not my option.

It remains to connect the liver with onions:

Mix everything, and you can start creating the casserole itself.

To do this, in a heat-resistant dish, greased with vegetable oil, I will put the pasta in the first layer:

The second layer is liver with onions:

Pour everything with cheese mixture:

Distribute it evenly over the surface:

And you can send our workpiece to the oven preheated to 200 degrees.

The casserole will be ready as soon as its crust becomes so rosy and delicious:

How not to try such beauty! Insanely tasty, juicy, unusual!

Personally, I perfectly understand my children, who went against their principles and ate everything clean, pretending that they did not recognize the liver.

Naval pasta with minced meat
Now I cook navy-style pasta a little differently than in Soviet times, since now it is much easier and more varied with food. The recipe for their preparation is incredibly simple and affordable, but what I especially like about it is its rationality. Indeed, from a small piece of meat and a pack of pasta, you can cook an incredibly tasty and hearty dinner for several people. Check out my recipe and 10 photos.
