How to close an iron can. Types of canning machines

Why doesn't the roll roll? How to choose and buy a convenient machine for canning (rolling). What to look for (10+)

Correct seamer

Let's discuss the choice of seaming. The main task of seaming is to crimp the metal lid on the neck of the can in order to ensure tightness.

Types of canning machines

Classic... Crimping is performed using a crimp element that presses against the edge of the cover and moves along this edge.

Experimental... Crimping with some innovative devices.

Classic seams differ in the way the crimping element is fed and the type of the crimping element.

By the method of feeding the crimping element

Manual feed

The pressure of the crimp against the edge of the lid is manually adjusted, usually by turning a knob. Turning the handle, we screw it in along the thread and, thereby, press the crimping element. The advantage of this approach is that we can adjust the speed at which the element is fed. For example, if the edge of the cover is not crimped very evenly, you can run the crimp element several times in a full circle without increasing the pressure. The second advantage is that we ourselves determine when to stop, that is, we can twist the handle exactly to such an extent that the crimp is ideal from our point of view. The second advantage turns into a disadvantage if you are not a very experienced roller. If the can is not rolled up tightly enough, then leakage or souring is possible. If you pass, then you can just split the jar.

Automatic feeding

The flow of the crimp depends on how many turns it has made around the edge of the lid. That is, for each revolution, it is fed a certain distance. If this roll is well adjusted, then it is convenient to use. You don't need to think about anything. Put it on the lid, make a fixed number of revolutions, that's it - you're done. But this is only so when she well adjusted... It is not uncommon for a new seaming to be adjusted incorrectly. With use, the clamping element shifts and the machine stops rolling. Self-adjustment is possible, but very difficult. I will not even undertake to describe the adjustment process here.

So the auto-feed seaming may not roll at all from the start. And if she rolls it up, then after a while (about 200 cans) she stops doing it. Each adjustment is enough for another 50 - 100 cans.

By type of clamping element

Hard... The clamping element is a specially shaped washer. It slides along the edge of the can. The advantage is reliability and better crimp quality due to smoothing out the folds of the lid edge. Disadvantages - quite a lot of effort that needs to be applied to the handle when rolling, and an unpleasant grinding noise when doing this work.

Bearing... The clamping element is a bearing. It rolls along the edge of the can. Advantage - easy to twist, no unpleasant sounds. Disadvantages - less reliability and crimp quality. Often, there is a faulty bearing right on a new car, which is spinning tightly or even jammed. When buying, be sure to twist the bearing with your fingers, check that it rotates easily and soundlessly.

Choosing a classic car

Cars that look exactly the same can work in completely different ways. One rolls up perfectly, the other spoils the lids. What is the reason. The correct operation of classic seaming is determined by just two gaps. Unfortunately, manufacturers do not monitor quality at all. So we will have to check these gaps ourselves when buying.

picture 1

Backing disc I will refer to the part that is applied to the cover. Figure 1 shows the first gap to be checked in yellow. To do this, turn the knob all the way. The gap should be about a millimeter or less. If it is larger, the seaming will not roll up, but will break and bend the covers.

picture 2

Now check the second gap, shown in red in Figure 2. The platter is bowl-shaped. A lid is placed in this bowl. We need to make sure that the smaller diameter of the clamping element goes inside this bowl by at least 1 mm. If this is not the case, then the feed of the clamping element will not be enough to roll the can tightly.

Generally speaking, these clearances can be adjusted by removing and sharpening part (2). To reduce the gap shown in Figure 1, you need to sharpen part (2) from the top and bottom. To ensure the protrusion of the edge of the crimping element, you need to sharpen the same part from the side of the support disk, that is, from the side opposite to the handle, because the protrusion of the part (2) against the support disk prevents protrusion. I have repaired the seaming so many times. This does not cause any problems, only it is very troublesome, it requires accuracy, especially undercutting from above and below. If you grind too hard, the sewing machine will be completely ruined. So I advise you to just choose a working sample right in the store based on the recommendations above.

An innovative machine

The pictures show one of the seaming options with the original crimping element. In it, for crimping, a spring is used in it, which, when the antennae is spread to the sides, squeezes the lid from all sides at once. With this crimping, the edge is wrinkled, with folds. How does this affect the tightness? I tried it on several banks. The scrap percentage turned out to be much higher than with the classic crimping method. This is not to say that it does not work at all, but sometimes it turns out to be leaky. In general, I did not use it.

If you nevertheless decide to use this particular option, please note that the cover must be properly installed before seaming. The cover should fit over the spring installed along the edge of the seaming. To do this, you need to press down on the lid with quite a lot of force.

Which seaming to choose

My choice is a classic hand-fed canning machine with rigid clamping element.

The metal cover is fitted with a rubber gasket. Make sure that this gasket lies flat and does not protrude. The edge of the lid should be crimped so that its upper part (1) tightly presses the elastic to the neck of the can, and the lower part (2) is compressed more, prevents the elastic from popping out and holds the lid on the can. In this case, the edge should be crimped evenly, without folds and irregularities.

Today we'll talk about what types of canning lids are and how they need to be rolled up.

What are the lids for autoclaving and how to choose the best

Today, 4 main types of lids are used for preserving products:

Tin lids

Time-tested classic canning lids. Tin lids are very popular with housewives, even though they are disposable and can be rolled up using a seaming machine.

Such a cover must be made of food grade metal and coated on both sides with food grade varnish. The lacquered lids are highly resistant to corrosion and oxidative reactions from the marinade. The lid made of unlacquered tinplate cannot be used for long-term seaming; the workpieces are likely to deteriorate.

Non-varnished lids are suitable for non-acidic products: preserves, jams or compotes. For salty preparations (vegetable marinades, sour berries and fruits), it is recommended to use coated lids. The fact is that unlacquered tin reacts with an acidic solution of the marinade and spoils the taste of the latter.

Screw caps (twist-off)

Convenient, reusable lids with limitations. For example, they are only suitable for seaming cans with a thread on the neck. The advantages include their relatively low cost and the ability to roll up manually without a seaming machine. The screw caps can be used several times, but you will do this at your own peril and risk: if the O-ring on the inside is damaged, the workpieces will deteriorate.

What products are suitable for

Twist-off lids are suitable for all types of food. But like tin ones, they have a different coating on the inside. For compotes and preserves, a regular lid is suitable, and for salty blanks it is better to use specimens with a lacquered finish.

Plastic lids

This type of lid is almost never produced today, nevertheless some housewives consider them the most environmentally friendly and airtight. They are not put on a jar without preheating in boiling water, but they are quite simple to remove.

What products are suitable for

Plastic lids are perfect for workpieces with a lot of sugar, where there is no risk of overpressure. To keep jams and jams stored longer, you can put a piece of paper soaked in alcohol under the lid. In the event of mold formation, the piece of paper will take everything into itself, keeping the blanks intact.

Caps with vacuum pumping system

A relatively new invention. They are reusable (manufacturers promise up to 200 seams) lids with a special valve and pump included. Their main disadvantage is the high price and the inability to purchase in a regular store. But the use of vacuum lids quickly pays off, and the blanks retain their original aroma and taste throughout the entire shelf life.

What products are suitable for

The list of products that can be rolled up with vacuum lids is great: vegetables, compotes, jellies, jams, salted preparations, fruits, berries. This type can be safely called universal.

How to properly roll up cans with preservation lids

But it's not enough to choose a high-quality seaming cap. You still need to roll it up correctly. This technology is not very complicated, but it also has its own tricks.

Tin caps and twist-off previously required to stand in boiling water. The rubber seal on the inside of the lid will soften and the cans will be sealed. After aging in boiling water, the lids are taken out, installed in the center of the neck of the can and fixed: tin ones - with a seaming machine, the twist-off is simply twisted tightly by hand.

Plastic lids after 2-3 minutes of exposure in boiling water, wind it on the jar. For reliable fixation, it is recommended to choose those lids that cannot be put on the jar without preliminary exposure.

Vacuum lids have a slightly more sophisticated canning technology.

  1. First of all, we prepare glass jars, inspect for chips and cracks.
  2. We wash the vacuum lids before use and put them in hot water for a couple of minutes.
  3. Fill the jar with food, put the lid on the neck, press the pump against the lid and make a few strokes. The cover will lock into place.

How to roll up banks? (video)

For any housewife, with the onset of the warm season, the hassle only increases. First, you need to plant something on the site on time, and then still find the strength to harvest. After that, many are faced with a problem - how to save it so that in winter you can regale your household? The main way to preserve berries and vegetables is conservation.

This method has undergone many changes over the years of its existence. Everyone remembers the old seamers. Many people use them to this day. The disadvantage of this device is that it must be used with great care. With a little more effort than required, you will end up with a jar with a broken neck, which you will not be able to use in the future. But as a result of numerous trials, today housewives know how to properly roll cans with a machine.

But everything changes, and the old cans have been replaced by new ones, whose lids are twisted. That is why more and more housewives are asking this question: "How to roll up jars with screw caps?"

Operating principle

The screw caps are called twist-off and have been used for conservation in Western countries for a long time. The essence of their operating principle is as follows. On the inside of the lid there is a special polymer coating that acts as a gasket. Under the influence of high temperature, it expands and tightly seals the can. As the temperature decreases, as it cools, the top of the lid is pulled inward, which is accompanied by a slight click. As a result, a vacuum effect is created in the can. Therefore, before rolling up cans with screw caps, heat the caps.

Terms of use

Most housewives, having looked at their neighbors or girlfriends, decide to buy such lids for themselves, but they do not know how to roll up jars with screw lids. There is nothing complicated here. First, you need to sterilize the jars in the same way as ordinary ones. This can be done with lids at the same time. The temperature for the lids should not be more than 60 degrees. Otherwise, it will lead to the destruction of the polymer coating.

The heated lid is placed on the can, ready for seaming. At the same time, it is necessary to ensure that the grooves on the lid exactly coincide with the stripes on the can. And another important thing is to inspect the can, or rather the neck, before

Quality control

In order to check and save yourself from worries about the reliability of the preservation performed, set the closed cans upside down. In this position, they must stand for at least 2 days. If during this time no smudges have appeared, and the lid has not swelled, then you can safely hide the banks in the cellar or basement.

How to open such a jar?

More than once you can hear from housewives that it is very difficult to open such banks. And if there are no problems with how to close jars with screw caps, then opening them can be impossible. In order to do this, you need to know a little secret: just turn the jar over and hit the bottom with your palm. Then screw the lid back on.

Thus, from the above, we can conclude that the use of new cans with screw caps made the life of housewives much easier. This preservation method is suitable for those who do not want to mess around in the kitchen for a long time or do not know how to roll jars with a machine.

In Russia, Belarus, Ukraine and other CIS countries, home canning is a real national culinary tradition. Even today, when you can buy pickled cucumbers or tomatoes in almost any supermarket, people prefer to cook them on their own. Both tastier and safer for health. True, not everyone can do it: either the container will "explode", or the mold will grow into an ugly film right under the lid. To safely avoid all these troubles, you need to know how to properly roll up the banks.

The whole rolling process consists of the following stages:

  1. Preparing dishes. First you need to prepare the dishes that you plan to use. Inspect each jar, wash it and sterilize it well. This can be done both in the oven and over a saucepan filled with boiling water. Some chefs and gardeners sterilize jars even in the microwave. There are a lot of ways, choose any.
  2. Cooking fruits and vegetables. Prepare the contents of your jars according to your chosen recipe. Jams, pickled vegetables, compotes, etc.
  3. We roll up the banks. Sterilize the caps (if you haven't already) and prepare the screwing tools. If the lids are iron, you will need a manual seamer.

There are two types of cars. The first ones are equipped with one handle and a cover attachment. To twist, you need to carefully put the lid on the neck of the jar, attach the machine to it and turn the handle clockwise several times. This must be done carefully, as the container may slip out of your hands. To prevent this from happening, it is recommended to roll the cans together: one holds the dishes with a towel, the second twists the lid.

Cars of the second type are more convenient, but a little more expensive. The design includes two handles and one nozzle. We lift the handles of the machine up and put the nozzle on the lid. We check whether the lid is evenly fixed on the neck. With effort we lower the handles down and clamp the metal. For reliability, you can repeat the procedure several times.

After seaming, try gently turning the cans upside down to check for leaks. If you notice that the brine is leaking, and air bubbles are collecting near the neck, then the lid is not holding very securely. Car ride it again.

  4. We cool and remove the banks. After twisting, the closed jars must be cooled. To do this, put them on the table and wrap them up with a warm towel or blanket. After the jar has completely cooled down (after about 45 - 48 hours), you can move it to a room for long-term storage.
It is recommended to store homemade products in a dry and cool place. The maximum shelf life is 12 months.

Harvesting from your garden-garden, preparing vegetables and fruits for canning and choosing the right recipe is all half the battle. As it turned out, almost the most important stage in home preservation is sterilization and closing the cans with lids. Just think: one wrong move and air can get into a jar of yummy for the winter. This means that such a blank will certainly swell and deteriorate with mold. How to close cans for the winter so that homemade products do not spoil? How to close cans with screw caps? How to do without lids and close the cans, for example, with paper? You will find answers to these and many other questions about conservation in our today's article.

How to close banks for the winter

There are several ways to close blanks for the winter. The most common and, at the same time, one of the most technically difficult options is the traditional way of closing the lids with a manual seaming wrench. Much easier, but according to the same principle, you can roll up cans with an automatic machine. In addition, there are special threaded caps that are screwed onto the jar without using any other apparatus. Well, the simplest and at the same time the most capricious way is to close the cans without lids using cellophane and thick paper. To study the question of how to close banks for the winter correctly, we will begin with the first method. It is ideal for preserving pickled tomatoes and cucumbers, as well as for preserves with jam.

How to close cans with a tin key

To begin with, it is very important to sterilize the lids well before rolling up the can. Also, be sure to check that the lid itself is new, intact and not bent.

Instructions on how to close the can with a tin key

  • Sterilize the lids. To do this, put them in a deep saucepan, cover with cold water and put on fire. After boiling, boil the lids for 10-15 minutes, depending on their number.
  • Then let the tin lids cool. If you use tongs to remove hot lids from a saucepan, they should also be pre-rinsed with boiling water. Cover the jar with a lid.
  • Place a seaming wrench on top and press lightly to release excess air. Then turn the key once in a circle. Scroll a few more times. If waves started at the junction with the jar, then you need to turn the seaming key several times in this area and thereby straighten them.
  • Then make a few more half-turns, tightening the edges of the lid, which are tightened worse. Visually make sure that the entire lid fits very tightly against the neck of the can. Then turn the workpiece upside down so that the lid itself oxidizes slightly and becomes completely sealed.
  • On a note! You can understand that the bank is already closed by the movement of the key. As soon as in order to turn the seaming key around the cap you have to make a lot of effort, and the key itself will lock every centimeter - the workpiece is ready.

    How to close screw-top jars

Screw caps are perhaps the fastest and most reliable way to close your homework for the winter. But there is a small drawback - not every jar is suitable for such a lid. A prerequisite is the presence of a special thread on the neck, on which, in fact, the cover will be attached. Such a thread, for example, is found on cans from store preservation. How to properly close the cans with screw caps? The technology itself is incredibly simple. To begin with, like ordinary ones, such caps must be boiled thoroughly. Otherwise, mold may appear on the workpiece during storage, for example, on jam. Then slide the cooled, dry lid onto the jar and press lightly. Turn it clockwise several times until it stops. There should be a clear click, which means the bank is closed. Turn the jar upside down and your blank is ready!

How to close jars without lids

Today it is hard to believe it, but tin and even more so plastic covers have appeared in wide use of housewives not so long ago. But home conservation, as you can imagine, existed long before their appearance. What was used to close the blanks for the winter in those distant times? As a rule, in Russia, vegetables were pickled and fermented in large wooden barrels, which were stored in cold cellars. Therefore, there was no need for tin lids as such at that time. But with the development of industry and urbanization, many housewives faced the question of how to close cans without lids. For a long time, wax paper impregnated with alcohol and thin twine were used for this purpose. This knowledge can also be useful to modern women, since sometimes ordinary lids are not at hand, and vegetables / fruits for preparations are already beginning to deteriorate quickly.

How to close jars with paper

To begin with, we note that the paper method is short-lived and at the first opportunity it should be replaced with canning with tin lids. First of all, you need to take very thick paper and cut out a circle from it, the diameter of which will coincide with the diameter of the neck. This paper must be soaked in rum or pure alcohol and close the blank with it. This method works well for boiled jam or preserves. But the blanks from tomato cucumbers are best closed with paper and cellophane. Cellophane can also be replaced with cling film folded in several layers. First, we wrap the neck with a piece of plastic bag, pulling it quite tightly to achieve tightness. We fix it on top with an elastic band or ordinary thread. After that, put a sheet of thick paper and form a lid from it. The paper is needed in order not to tear the cellophane during the transportation of the blanks. The paper cap should also be secured with thread or elastic.
