Friends, I recently promised to write to you about cookies, so here I am writing! I have never really baked cookies and until recently I considered baking such small things to be not at all serious and not healthy, since they contain a lot of sugar and fat. With the children, we most often baked cupcakes, pies, whipped biscuits (yep, all very good for health and figure), but we never got around to cookies. And recently I promised the bread grinders to bake It descended on me and I discovered this miracle - the delicious world of homemade whole grain cookies! I baked oatmeal with whole grain flour, and so far these are the most delicious and wonderful cookies I have ever tried!

I got acquainted with the oatmeal recipe thanks to a talented culinary blogger Talerke, who came to visit and filmed me baking bread. Andrey Azarov showed a very simple, understandable and beautiful English oatmeal cookie recipe, and there really is a lot of oatmeal in it - 2.5 cups per cup of flour, plus honey, sugar and butter, and it is somewhat reminiscent of our sugary oatmeal (and if you overdo it with sugar, it even resembles it), but much, here in a hundred times tastier. I reduced the amount of sugar and butter, added nuts and gingerbread spices and it turned out even tastier! We even baked it in the garden; on occasion, I brought the mill there to show the children how flour is made.

For 20-25 pcs.
2.5 cups oatmeal (I use homemade, crushed especially for the recipe);
1 tbsp. whole grain flour;
100 gr. soft butter;
2 eggs;
½ tbsp. sugar (you can safely reduce it by half);
½ tbsp. honey (can also be halved);
¼ tsp. salt;
1/ tsp soda;
½ tbsp raisins;
½ tbsp. walnuts;
1 tsp gingerbread spices or a mixture of nutmeg and cinnamon.

Our cookies would probably win the competition for the most children's and healthiest cookies! We are cereal pressed shortly before kneading the cookie dough (in Ernopressor Eschenfelder AB), the flour was ground completely before. Homemade flour surprised both children and adults; the former took the most active part in the process: they poured grain into the hopper, inserted the cord into the socket, pressed the switch, lifted the lid and watched as the wheat grains fell down onto the millstones. The responsibility was off the charts; the little ones were especially zealous in making sure that there was no large mound of flour in the bowl and that it did not cover the hole in the “nose” of the mill.

The children helped me not only grind flour, but also performed other tasks: whipped butter, chopped nuts, broke eggs, in general, see for yourself what was going on with us :)

Process.

About 20 minutes before baking, turn on the oven to warm up to about 190 degrees, beat soft butter, salt and sugar, as soon as the butter becomes fluffy, add honey and continue to beat until the honey is completely dispersed.

As soon as this happens, add the eggs - one at a time, beating the mass with a mixer each time.

In a separate container, mix flour, cereal, soda, spices, raisins and nuts.

Add the dry ingredients to the butter mixture, mix, and then mix again with a mixer.

Spoon the dough onto the parchment, leaving a little space between it (it will float a little in the oven), press down a little, and bake for 10-15 minutes.

Let the finished cookies cool to at least warm temperature and serve with milk, tea, or just as is.
We baked these cookies in an old oven that has been around for years and years, and I’m surprised how we even baked them!

The first batch blurred and browned chaotically, the second turned out a little better, and the third, I think, was almost a success. But, you know, this didn’t affect the taste at all. Don't hesitate to bake these cookies, they're so good!

And in the photo at the beginning of the recipe there are oatmeal cookies from a regular oven.

Whole grain flour is ideal for baking, has a rich, bright taste and is considered healthier than higher grade products. Rye flour forms an equal and harmonious duet with it, giving the dough a warm golden-brown hue and a characteristic flavor. Small white sesame seeds stand out against such a background as an appetizing contrast.

A snack version of cookies (without sugar) can be prepared using your favorite spices. The fairly dense dough easily rolls out into a thin layer. The pieces cut from it in the oven quickly turn into crispy, melt-in-your-mouth plates.

Ingredients

  • whole grain flour - 150 g
  • rye flour - 50 g
  • vegetable oil - 1 tbsp. l.
  • salt - 0.5 tsp.
  • sugar - 2 tsp.
  • sesame seeds - 3 tbsp. l.
  • water - 60–70 ml

Preparation

1. Prepare a bowl with high sides. Sift whole grain and rye flour into it.

2. Add salt, sugar and sesame seeds to the flour mixture. Use a whisk and stir until evenly distributed. Cookies can be made not only sweet, but also salty. Just omit the granulated sugar from the recipe. You can add other spices and dried herbs to the salty version.

3. Make a small well in the center of the dry ingredients. Pour in room temperature water and oil.

4. Mix thoroughly with a spoon until all ingredients are moist. If the mixture is dry, add a little more water. Once the flour mixture is wet, turn out onto a board and begin kneading with your hands. At first the dough will crumble, but as you knead it will turn into a homogeneous and smooth lump.

5. Cover with a towel and let rest on the kitchen counter for 10-15 minutes.

6. For convenience, you can divide the dough into two halves. If necessary, dust the countertop with flour and lay out a piece of dough. Roll out with a rolling pin into a very thin layer. It will be convenient to take two sheets of parchment and roll out the dough between them. Trim with a sharp knife into a rectangular shape. Prick the entire layer with a fork. Cut into small portioned rectangles or squares. You can take cookie cutters and cut out the desired shapes.

I ordered whole wheat flour and decided to try it on cookies. Since I really love oatmeal cookies, the choice fell on them. I also added honey instead of sugar. It turned out very tasty, although not too sweet. For those who like it sweeter, it is better to increase the amount of honey.
The cookies turned out very well with whole grain. And it tastes very tasty, with the aroma of honey, you can add all sorts of dried fruits. In general, they go very well with milk or a cup of coffee.

Ingredients:
115 g buttermilk
130 g liquid honey
1 large egg
0.5 tsp vanilla extract
100 g whole grain flour
0.5 tsp baking powder
150 g oat flakes
a pinch of salt

Preparation:
Cream butter with sugar and a pinch of salt. Add egg and vanilla extract, beat.
Add flour, baking powder and cereal. Mix everything. Spoon out cookies.
Bake in preheated temperature up to 200C for 8-12 minutes. You can do less, then the cookies will be soft, you can keep them in the oven longer, then they will be crispy.

Making cookies for tea so that they are inexpensive, tasty and healthy is not at all difficult if you have an assortment of flour in your kitchen, a jar of sweet aromatic honey and, most importantly, desire and time. It just takes a little time to prepare whole grain cookies. The baked goods turn out soft if you do not overcook them in the oven, and moderately sweet. Just right with a cup of coffee for breakfast.

To make whole grain cookies, take the following products.

First of all, you need to prepare the flour. Sift into a convenient deep bowl, add baking powder and mix well using a hand whisk.

Remove the butter from the refrigerator, cut into cubes, and add to the flour mixture. Rub with your hands until crumbs form.

Add chicken egg and honey. Knead the dough quickly. Wrap in cling film and refrigerate for 60 minutes.

Roll out into a layer, not very thin. Roll out conveniently between two sheets of parchment paper. Trim with a knife to form a rectangle. Cut into long rectangles or squares or use cookie cutters.

We squeeze out “iamcook” on the blanks. For this purpose there is a special alphabet for working with mastic.

Transfer the blanks along with the parchment to a baking sheet. Place in a hot oven. Bake whole grain cookies for 15-20 minutes at a temperature of 180-190 degrees.
