To prepare this recipe, you will need the following products:

  • Flour - 3 cups

  • 2-4 eggs
  • A pack of butter. Of course, you can replace butter with margarine, but if you love your family and take care of their health, then it is better to buy butter. I would also like to advise you to buy butter with a higher fat content, since the higher the fat content of the oil, the tastier and more airy the shortbread cake with cottage cheese is.
  • Sugar - 150 grams (but I always add to taste, as they say, by eye).
  • You can also add baking soda at the tip of a teaspoon, but not required. I did it with and without baking soda and I didn't feel the difference.

For the filling you need to take:

  • Cottage cheese - 2 packs, or 400 grams by weight.
  • Sugar - 150 grams (I also add to taste)
  • Sour cream (or cream) - 3-4 tablespoons.
  • You can also take any berries or apples to your taste.

At the very beginning, when I was preparing this pie with cottage cheese, I took the butter right from the refrigerator. The butter was cold and I kneaded the dough for a very long time to the desired consistency. Well, what can I do, the young one was not experienced, but now I take the oil out of the refrigerator in advance in the evening so that it becomes soft. And after 30-40 minutes, my family gets a delicious cottage cheese pie for breakfast (I get up very early, so I have time to prepare it for breakfast).

Sift the flour through a fine sieve, add sugar to it and mix well.

Then, add butter to the flour with sugar and stir thoroughly so that it turns out not dough, but crumb.

Then add eggs and stir well. You should get a crumb. If the mass looks like dough, then add a little more flour.

After the dough is ready, we proceed to preparing the filling. There is nothing complicated here, we just combine cottage cheese, sugar and sour cream and mix well.

So, now we need a baking sheet, on the bottom of which I cover the foil, but this is not necessary, it's just more convenient for me, and I don't like to tear off pieces of burnt baking from the baking sheet later (yes, it happens).

Put half of the dough on the finished baking sheet. If you are making a pie with cottage cheese and apples, then put the next layer with apples and sprinkle with a little sugar.

Knead flour dough, 20 g sugar, yolk and milk. Distribute it evenly in a split form, forming sides, and put it in the refrigerator for an hour. Chop the dough with a fork and bake for 15 minutes in an oven preheated to 200 degrees.
For the filling, peel the apples, chop thinly and pour over with lemon juice. Beat 100 grams of sugar with 3 yolks, lemon zest, vanilla, cottage cheese, cheese, sour cream and pudding (starch).

I want to note right away that you need 200 grams of flour. The flour must be weighed, since 200 grams is more than a 200 grams glass of flour. Although I have a glass of flour in my photo, I weighed the flour on a scale and added up to 200 grams more.

In a glass with a small slide, we got 150 scales of flour. So roughly calculate a third of the total if you don't have a kitchen scale.

To prepare the dough, we need 150 grams of butter, 1 small egg, 100 grams of sugar, a teaspoon of baking powder.

I bought sour cream in a store, took 20%, you can take 10 or 15%, you can even use village sour cream.

The curd mass needs to be whipped in a blender until smooth, but I mix everything with a spoon, I have cottage cheese in pieces, I don't want to beat, I want the pieces of curd to be felt in a shortcrust cake.

The filling turned out to be yellow, since, again, I used village eggs, the yolks in the eggs are orange.

I will cook the pie in a split form. I have a large and small shape, no middle one. I prepared a pie in a large form, diameter of the form is 25 cm. The form can be greased with butter and sprinkled with flour. But I decided to line the bottom and sides with parchment paper to make sure the dough doesn't stick.

I divided the dough into 2 parts. 1/3 of the dough remained with us, and I distributed 2/3 of the dough in shape with my hands.

When distributing the dough, we take into account that we need a little on the sides. I spread the dough onto the sides with my fingers, literally 2 cm.

I spread the curd filling on top and spread it over the dough with a spoon. The form, of course, I have a huge one for this amount of test. Spread the dough in a thin layer.

At this stage, put berries or fruits on top of the curd. It will be very tasty with raspberries and blueberries. We already bought autumn raspberries for the pie twice, but the children ate them right away. We still have the berries in the freezer, but I'll make the frozen berry pie some other time.

Today the shortcrust pastry pie will be with apples. I peel the apples and rub them on a coarse grater. To prevent the apples from darkening, you can sprinkle them with lemon juice, but I am not confused by the appearance of the apples, so I do not.

Also, I don't add sugar to apples. The apples are very juicy, so they immediately started up the juice. Before putting them on the pie, I squeezed the juice from the apples with my hands, we don't need extra liquid in the pie.

I want to emphasize once again that you need to squeeze the juice from apples!

Apples go well with cinnamon, so I sprinkled the grated apples on top with a little ground cinnamon. Cinnamon gives baked goods a unique taste and aroma.

Remember we left 1/3 of the dough, we left it to decorate the cake on top. You can decorate the top of the pie with stripes, but I decided to rub the dough on a coarse grater.

Spread the grated dough evenly over the entire surface of the cake. It turned out to be a very thin layer, so next time I'll take a smaller shape.

If the dough becomes soft, then place it in the freezer for a while, the dough will become a little harder and you can grate it.

I put the cake in a preheated oven. The oven has warmed up to 200 degrees. The cake was baked for about 35-40 minutes.

Let the cake cool. We take it out of the split form. I sprinkled icing sugar on top of the cake, it is especially appropriate to sprinkle the cake with powdered sugar if you use sour berries for the filling.

To be honest, I was very worried about the taste of a pie with apples, as with berries we are more used to it, but a shortbread pie with cottage cheese and apples is not customary. I cut a slice of the pie and tasted it.

Incredibly, there was no chapel for my delight, it turns out I was worried in vain. The shortcrust pastry pie with cottage cheese turned out to be wonderful.

I took a closer photo. The cake tasted very tender with a creamy touch.

Thin crunchy dough, delicious curd filling and some apples that added spice to the pie. A couple of apples in the pie were not superfluous at all, they very harmoniously complemented the taste of the pie.

My husband, children and I liked the cake. The whole family was delighted. You can serve such a cake with melted chocolate or chocolate icing or caramel. Or you can put a ball of ice cream on top.
