Ingredients

eggs - 4 pcs.;

sugar - 130 g;

flour - 145 g;

baking powder - 0.5 tsp;

jam - 2-3 tbsp. l.

Cooking steps

Then add sugar to the beaten eggs.

Pour in the sifted flour with baking powder. Gently stir the dough with a spatula from bottom to top.

The dough should be quite fluffy and not too thick (as in the photo).

Cover the baking dish (my size is 20x20 cm) with parchment, pour half of the dough and level. Place jam on top of the dough.

I know that many people know how to bake charlotte, but still, for many, it does not work out airy and lush! I myself always make it "by eye", but the recipe for classic charlotte measured for those who cannot understand why charlotte it comes out with a pancake, then it is not baked, then it burns 🙂 Recipe but this charlottes with jam is no different from the classic one, we just replace some of the sugar with jam. I never add baking soda and baking powder to charlotte. Somehow it happened since labor lessons at school 🙂 Those who are about my age 30+ still remember labor lessons 🙂

So, the recipe for charlotte with jam!

Recipe:

  1. Flour - 300 gr.
  2. Sugar - 200 gr. (for classic 270 g sugar without jam)
  3. Any jam - 3 full tablespoons * I have strawberries
  4. Eggs - 5 pcs.
  5. Apples - 3 large

Ingredients optional: * I have raisins and vanilla

  1. Citric acid - 1/2 tsp
  2. Raisins - a handful
  3. Vanilla - to taste

Small digression:

* Jam can be added to any part relative to sugar up to a glass. A glass of jam is too much for me, but 3-4 tbsp. spoons are the best option.

** In finished form, due to the charlotte jam, it turns out a little with a different crumb. Not as airy as in the classics, but still very soft. It just crumbles and crumbles less 🙂 Well, the color “walks” depending on the jam 🙂

*** A glass of sugar DOESN'T equal the weight of a glass of flour, so I write in grams.

****If you do not add sugar, you will have a very clear thick crust on top (means a lot of eggs for this amount of sugar), if pour sugar, then there will be a delicious crust breaking on top, which after a day / two, if you did not have time to eat, becomes soft) In all cases, charlotte is edible, of course 🙂

***** I have standard eggs, if you have small or large homemade eggs, the amount of flour and sugar may differ from the recipe. (well, this is in very extreme cases, if you have homemade eggs or very small ones)

Preparation:

  1. Grease the form with butter, pour the raisins with boiling water, cut the apples into squares / slices / triangles
  2. Beat eggs + sugar (+ vanilla + citric acid) so so that it rises 3 times! At this stage, we follow the kneading, if the proportions work out, then the dough rises instantly, 2-3 minutes are enough for whipping, the dough becomes like foam!
  3. Add flour, mix our foam with flour
  4. Add jam
  5. Beat well again
  6. Pour in apples and raisins, mix * In general, I always put apples on the bottom of the mold and pour the dough on top, but today I baked it for the first time in a mold with a hole and decided to mix everything before pouring it into the mold
  7. Oven for 170-180 gr. and bake until a beautiful crust. (30 minutes +) We pierce with a toothpick. If it's dry, the charlotte is ready!

Cool and eat! * Of course, my family guarded the charlotte already in the process of photographing, so they ate it warm 🙂

To cook charlotte, you first need to do the dough.

  1. Separate the egg yolks from the whites, beat the last with sugar until a mass of density and uniformity is obtained.
  2. Now add the proteins to the dough and continue to beat.
  3. Add flour to a homogeneous composition, after sifting it through a sieve, stir the mixture to eliminate flour lumps.
  4. We extinguish the soda with vinegar, pour it into the dough.
  5. Further, the recipe provides for the addition of cinnamon, sour cream, stirring the ingredients.
  6. Add the filling directly to the dough, send the mixture into a baking dish, which must first be greased with oil (preferably olive, but you can also use sunflower or butter).

Charlotte with apricot jam

The recipe is simple. For charlotte, you can use other types of jam, but with apricot it turns out to be very tasty. It is desirable that it has a dense consistency, it contains apricot pieces.

Products:

  • Flour - 0.3 kg;
  • Kefir - ½ cup;
  • Filling - 0.3 kg;
  • Eggs - 3 pcs.;
  • Vanilla - ½ tsp;
  • Soda - 1/3 tsp;
  • Sugar - ½ cup.

Cooking:


  1. It is not necessary to separate the whites from the yolks to prepare the dough. Beat them with sugar until the latter is completely dissolved.
  2. Add flour, sour cream, soda with vinegar to the mixture, mix everything well.
  3. Combine the dough with apricot jam. The whole composition can be whipped with a blender to get a homogeneous mass. If you do not want the treat to have such a consistency, gently stir the mixture before baking with a spoon.

Usually this product is very sweet. If you want your charlotte not to seem cloying, you can make a dish not only with strawberry jam, but add sweet and sour apples to it.

Products:

  • Wheat bread - 320 g;
  • Strawberry jam - about 1 glass
  • Milk - 1 glass;
  • Sugar - ½ cup;
  • Apples - 0.5 kg;
  • Butter - 50 g;
  • Eggs - 1 pc.;
  • Cinnamon - to taste (can be excluded from the list of ingredients).

Cooking:


  1. Peel the apples, remove the seeds, cut into cubes, add sugar, taking a third of the total volume that will be needed to make a pie with strawberry jam.
  2. Cut off the crust from the bread, and chop the pulp into rectangular slices, the thickness of which is about ½ cm. Dry the cuttings, having previously chopped them into slices.
  3. Combine the remaining sugar, milk and eggs, stir until a uniform consistency is obtained with the composition, moisten bread slices in the mixture.
  4. Grease the baking dish with butter, put those slices of bread that we got from the crusts on its walls and bottom.
  5. Next, according to the recipe for charlotte with strawberry jam, combine apples with dried bread slices and cinnamon, stir, put the mixture in a mold.
  6. We send the pie to bake in the oven (for 40 minutes), making the temperature in it about 200 degrees.
  7. Pour the finished dish with jam. There is another option - the latter can be poured over the delicacy before it is sent to the oven.

The dish is also simple to prepare, and it turns out to be sweet. Apple or cranberries, currants and other sour berries and fruits, which go well with raspberry jam, will slightly balance the taste of charlotte.

You will need the following products:

  • Raspberry jam - 1 glass;
  • Apples - 3 pcs. (can be replaced with a glass of any berries);
  • Sugar - 2 cups;
  • Butter or vegetable oil;
  • Flour - 2 cups;
  • Salt - a pinch;
  • Baking dough - 2 tsp;
  • Vanilla to taste.

Cooking:


  1. The first step is to chill the eggs so that the biscuit is fluffy. Then, for a pie with raspberry jam, beat them with salt using a mixer until a thick foam forms.

To prepare charlotte with any jam in a slow cooker, you will need the following products:

  • Eggs - 3 pcs.;
  • Filling - any to taste;
  • Flour - 0.2 kg;
  • Low-fat cottage cheese - 50 g;
  • Butter - 20 g;
  • Soda - 1/3 tsp;
  • Sugar - 3 tbsp. l.

Cooking:


  1. Stir eggs with sugar in a deep container, add cottage cheese and filling to the mixture, stir again.
  2. Pour half of the total flour into the dough for charlotte, which will be cooked in a multicooker, stir again, and it is better to do this with a mixer.
  3. Add the rest of the flour and stir.
  4. Put soda in the dough, mix again. Please note that the consistency of the mixture must be liquid.
  5. Lubricate the multicooker bowl with oil (it should be melted).
  6. In the "Baking" mode, cook the charlotte for 50 minutes.

  7. Send to bake for forty-five minutes at 170 Celsius. Serve with either protein, ice cream or cream.

Charlotte with strawberry jam

  • 320 g flour;
  • 3 g of soda;
  • 7 ml vinegar;
  • 280 g of jam;
  • 30 ml sour cream;
  • 90 g sugar.

Time - 45 minutes.

Caloric content - 280 kcal / 100 g.

How to cook:

  1. First you need to beat the eggs with a mixer. You should get foam, into which you need to add sugar. Continue whisking until the foam becomes stronger and the grains are completely dissolved;
  2. Take a spoon and add flour in parts, mixing it thoroughly. There should be no lumps;
  3. After that, pour the soda over with vinegar and stir in this effervescent mixture;
  4. Add sour cream at the end. Stir, you should get a liquid homogeneous dough;
  5. Jam (preferably with whole berries) gradually add to the dough. No stirring required;
  6. Grease the mold with oil and pour the whole mass into it;

  • 2 apples;
  • 4 g of soda;
  • 60 g of cottage cheese;
  • 15 ml of oil;
  • 45 g sugar;
  • 60 g of jam;
  • 190 g flour;
  • 20 g butter.

Time - 1 hour 25 minutes.

Caloric content - 198 kcal / 100 g.

Cooking method:

  1. With a mixer, you first need to beat the eggs and sugar. When foam appears, add jam with butter and interrupt again;
  2. Then add the curd. It is desirable that it be with a minimum percentage of fat, or even completely fat-free. Intervene it too, so that there are no grains;
  3. Pour in flour and continue kneading, you can use the same mixer;
  4. At the end add baking soda, mix everything. You get a pretty liquid consistency;
  5. Wash the apples, core them and cut into small pieces. They need to be mixed directly into the dough. If there are no apples, you can simply use apple jam, where these fruits are also sliced. But then less sugar should be put in the dough;
  6. Lightly grease the bowl of the multicooker with vegetable oil. Pour the dough into it;
  7. Place the mold and close the lid. Select the "Baking" mode with a timer for fifty minutes;
  8. After the signal from the multicooker, you need to change the mode to "Fry" and leave for another fifteen minutes, so that a beautiful crust forms on the cake.

Soda is almost always added to the charlotte, otherwise the cake will be very dense and may not bake. Soda helps the dough to be fluffier and softer. Baking powder can be added instead. If there is neither one nor that, you can use yeast or mineral water, and some housewives even add a couple of tablespoons of beer. This will not affect the taste.
